  • 2 cups fresh basil leaves (packed)
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 cup extra virgin olive oil
  • 1/3 cup pine nuts or walnuts
  • 3 garlic cloves (minced)
  • Salt and pepper to taste
  1. Cook the pasta according to the package instructions until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.
  2. In a food processor, combine the basil leaves, Parmesan cheese, pine nuts or walnuts, and minced garlic. Pulse until the ingredients are finely chopped.
  3. With the food processor running, gradually add the olive oil in a steady stream until the mixture forms a smooth paste. You may need to stop and scrape down the sides of the bowl with a spatula.
  4. Season the pesto with salt and pepper to taste. If the pesto is too thick, you can thin it out with a little bit of the reserved pasta water.
  5. In a large mixing bowl, toss the cooked pasta with the pesto sauce until well coated.
  6. Serve the pasta hot, garnished with extra Parmesan cheese and fresh basil leaves if desired.
