  • sharp knife or vegetable peeler
  • spreader (for hummus)
  • mandoline slicer for even veggie cuts - optional

Ingredients
  

  • 4 large whole-grain tortillas or wraps
  • 1 cup hummus - store-bought or homemade
  • 1 cup shredded purple cabbage
  • 1 cup grated carrots
  • 1 cup thinly sliced cucumber
  • 1 cup thinly sliced bell peppers - red, yellow, or orange
  • 1 cup baby spinach or mixed greens
  • 1/4 cup chopped fresh parsley or cilantro - optional
  • 1/4 cup crumbled feta cheese - optional

Instructions
 

  • Prepare the Veggies: Wash and prep all vegetables. Slice, shred, or grate as needed to make them easy to layer.

Assemble the Wraps:

  • Spread 2–3 tablespoons of hummus evenly over each tortilla.
  • Layer the vegetables evenly over the hummus, starting with spinach or greens, then adding the cabbage, carrots, cucumber, and bell peppers.
  • Sprinkle with parsley or cilantro and feta cheese if desired.
  • Wrap It Up: Fold in the sides of the tortilla, then roll tightly from the bottom to secure the wrap.
  • Serve: Slice the wraps in half diagonally and serve immediately.
