Ingredients
  

For the salad:

  • 4 large ripe tomatoes - sliced
  • 1 small red onion - thinly sliced
  • 1/4 cup fresh basil leaves - torn
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste

For serving:

  • 1 large baguette - toasted (use gluten-free bread if needed)

Instructions
 

  • In a large serving bowl, arrange the sliced tomatoes and thinly sliced red onion.
  • Sprinkle the torn basil leaves over the tomatoes and onions.
  • In a small bowl, whisk together the extra virgin olive oil and balsamic vinegar to make the dressing.
  • Drizzle the dressing over the tomato salad.
  • Season the salad with salt and pepper to taste.
  • Toss the salad gently to coat the ingredients evenly with the dressing.
  • Let the salad sit for a few minutes to allow the flavors to meld together.
  • While the salad is resting, toast the crusty bread slices or baguette until golden brown and crispy.
