Granola Bars with Almond Butter

Ingredients
  

  • 1 ½ cups rolled oats
  • ½ cup almond butter - unsweetened and creamy
  • cup honey or maple syrup
  • ¼ cup chopped almonds
  • ¼ cup dried fruit - e.g., raisins, cranberries, or chopped apricots
  • 2 tbsp chia seeds or flaxseeds
  • 1 tsp vanilla extract
  • ¼ tsp salt

Instructions
 

  • Prepare the Pan: Line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal.
  • Combine Wet Ingredients: In a small saucepan over low heat, warm the almond butter and honey (or maple syrup) until smooth and combined. Remove from heat and stir in the vanilla extract.
  • Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped almonds, dried fruit, chia seeds, and salt.
  • Combine and Mix: Pour the warm almond butter mixture over the dry ingredients. Stir well to coat everything evenly.
  • Press into Pan: Transfer the mixture to the prepared baking dish. Press it firmly and evenly into the pan using a spatula or the back of a spoon.
  • Chill: Refrigerate for at least 1 hour, or until the mixture is firm.
  • Slice and Serve: Lift the granola slab out of the pan using the parchment paper. Cut into 8 bars and serve.
