For the dressing:
3tablespoonsextra virgin olive oil
1tablespoonbalsamic vinegar
1teaspoonDijon mustard
1teaspoonhoney - or maple syrup for a vegan option

Instructions
In a large salad bowl, combine the mixed salad greens, avocados, cherry tomatoes, cucumber slices, radishes, and red onion.
If using, sprinkle the crumbled feta cheese and toasted nuts or seeds over the salad ingredients.
In a small bowl or jar, whisk together the extra virgin olive oil, balsamic vinegar, Dijon mustard, honey (or maple syrup), salt, and pepper until well combined. Alternatively, you can shake the ingredients together in a jar with a tight-fitting lid.
Drizzle the dressing over the salad and toss gently to coat the ingredients evenly.
Taste the salad and adjust the seasoning if needed, adding more salt and pepper to taste.
Serve the spring salad immediately as a light and refreshing side dish, or as a main course by adding grilled chicken, tofu, or shrimp on top.
